Mooleh Manay. An estate located in Suntikoppa, North Kodagu. Located by the backwaters of the Harangi River, at the foothills of the Western Ghats.

The estate boasts of more than 60% shade cover provided by indigenous & jungle trees & plants, some of which are more than 100 years old. Naturally then, wildlife like boar, civet cats & barking deer among other call this estate their home. The constant endeavour to maintain a fine balance between the eco-system & cultivation of coffee is what makes this estate all the more special.

Akshay & Komal grow coffee on their estate with all of their heart. They walk the land, inspect the bushes, hope for rain, watch the cherries for ripeness, enjoy the flora & fauna that co-exist with them and work to constantly improve all their processes on the estate.

Process

Selective picking of ripe red cherries

Slow drying of cherries on raised beds to obtain the desired moisture content
Harvest - A method called selective picking is followed where labour is taught to recognise & pick only the perfectly ripe cherries. Not too early, not too late.
Process - Raised beds are used to dry the cherries naturally in the sun. The cherries are constantly raked to ensure that all parts are equally exposed to the heat & air circulation is maintained for even drying.
